GRANNY'S TOMATO SOUP

Ingredients


A lovely chunky Tomato soup topped with our Super Dukkah for extra crunch and seasoning. It's a real Autumn boost and very easy to make and freeze.

2 lbs ripe tomatoes (Of course, Granny insists they are home grown, but we do comprimise on that one occassionally at Dukkah HQ!)

2 medium leeks

2 cloves garlic

1 tbsp olive oil.

Roughly chop all of these and soften in a pan. Then add:

2 teasp pesto

1 tbsp balsamic vinegar

1 teasp parsley (dried or freshly chopped)

1/2 teasp dried oregano

1 chicken stock cube made to 3/4 pint

Sea salt to taste.   Bring to the boil and gently simmer for 15 minutes. Leave to cool and blend to required consistency. (Don't do what I do and use the hand blender in the pan whilst its still really hot and get hot soup splashes over me as I'm too impatient to wait for my lunch!).

Finish off with a good spoonful of Super Dukkah for extra seasoning and crunch and a dollop of creme fraiche, gradually stir these through as you eat the soup, it's fab!
